Take these recipes, the star of the show is something known in Spain as secreto Ibérico. It translates literally as Iberian secret. It’s an ultra-fatty cut of pork, normally sliced from a pig fed on acorns. The same animal that gives us Ibérico ham. When you cook it and the fat melts away, it leaves a beautifully tender, juicy meat loaded with flavour.
